La del vivo – BOJ Pairing by Jon William
Today, we are going to try something very interesting: La del Vivo from La Vizcaína. It is a white wine aged 12 months in French oak barrels.
It comes from the D.O. Bierzo and is produced by Raúl Pérez, one of the most highly-rated Spanish winemakers.
The grape, 100% Godello, is from the town of Lomas de Valtuille, a place with a gentle micro-climate of mild temperatures and the ideal humidity.
The ideal serving temperature is around 7 ºC and the perfect pairing would be a baked white fish, seafood in sauce, rice in broth and spicy fish stews. It also pairs really well with the special recipe that Aingeru Etxebarria is going to prepare for us and that you can see here.
