Ieup!
Today I’m bringing you a very special white Txakoli from the Magalarte Winery in Lezama: Ieup! This is a very appropriate name for a D.O. Bizkaiko Txakolina wine whose vines grow just a few metres from where the Athletic team trains.
The average age of the vines is 15 years and the grape varieties grown are hondarrabi zuri and hondarrabi zuri zerratia. The harvest for Ieup! is done by hand between 17 September and 9 October.
In sight it is straw-coloured with a greenish edge, clean and bright. On the nose it is very intense and is typical of the variety, with highlights of white fruit, aromatic plants and a balsamic touch of fine herbs. In the mouth it is flavoursome, with balanced acidity and freshness, ensuring its maximum aromatic potential in the mouth.
It should be served at 10ºC and the perfect pairing is clear and creamy soups, cold meats, vegetables, pasta, eggs, fish and seafood.
It also pairs fantastically with the dish that Aingeru Etxebarria is going to prepare for us and which you can see here.
