Magister Bibendi – BOJ Pairing by Jon William
This week we would like to tell you all about Magister Bibendi Reserva 2016. A Rioja produced by the winery Bodegas Navarrsotillo, with the Graciano grape grown on twenty-year-old vines.
The wine is aged for twelve months in French and American oak barrels. It has a very bright cherry red colour. In its powerful aroma what stands out are the ripe fruits of the forest combined with the toasted and smoked hints coming from the barrel. On the palate what stands out is its initial vivaciousness followed by a marked fruity taste with a finish of sweet and pleasant tannins,
The ideal drinking temperature: 18 ºC, and we can drink it for up to ten years after its harvest.
We can pair it with game, above all with poultry such as pheasant or partridge, casseroles with country herbs, Iberian pork, with mushroom dishes and, of course, with stews.
