Malus Mama 2012
This time we are not talking about a wine, but rather an exclusive sweet cider, Malus Mama, produced in Astigarraga (Gipuzkoa) by Iñaki Otegi. It is called an “ice cider” because they produce it using frozen apples which have a more concentrated sugar content.
Malus Mama 2011 is a sweet cider, made with different apple varieties. It is intensely aromatic on the nose. In the mouth the first impression is of an intense, pleasant and balanced sweetness due to the very pronounced but well integrated acidity. It has a long finish, leaving a very good after-taste in the mouth.
Only 2,500 bottles are produced and they are all sold to high-level restaurants and to individuals through a private club.
The serving temperature is between 10 and 15ºC and it pairs perfectly with magret, sausages, turbot, cod cheeks, canned fish, nuts, big and small game, foie gras, cheese, ice cream and cakes that are not very sweet.
