Marqués de Poley – BOJ Pairing by Jon William
This week we will pair our recipe with a generous wine. Palo Cortado is possibly one of the most mysterious types of sherry.
Marqués de Poley is a rarity in the Toro Albalá winery collection which is usually known for its huge sweet vintage Pedro Ximénez wines and its amontillados. Taken from its wineskins at the end of 2018, this Palo Cortado has an unusual aromatic intensity. Tobacco, wood, clove and pepper, citrus and nuts. It is very intense and elegant in the mouth.
Marqués de Poley belongs to the DO Montilla-Moriles in Cordoba and is made with the Pedro Ximenez grape variety.
It is best served at a temperature of 13ºC and it pairs well with white garlic, of course, and also with nuts, cured cheeses, highly-concentrated consommés, stews and gelatinous cuts of meat.
